Amish Baked Oatmeal

Made this recipe today that I found on beingfrugal.net. It was really delicious- Bea and Luke both loved it, and it was quick and easy (well, I still only got halfway through before becoming too exhausted to finish- but that's just me these days- Luke helped). I think this will be a great one to have on hand with four kids. For now, I'll probably throw the leftovers on top of some yogurt- yums!!

Amish Baked Oatmeal

2 eggs, slightly beaten

1 cup brown sugar (I did 1/2 cup brown sugar, 1/2 cup applesauce)

1 cup milk

1/2 cup oil

2 tsp. baking powder

2 tsp. vanilla

1 1/2 tsp. salt

3 cups oatmeal (not instant)

I added a couple of shakes of cinnamon

Preheat oven to 350. Beat eggs. Add other ingredients, except for oatmeal, and mix well. Stir in oatmeal. Spread in a greased 8×8 pan (or casserole dish). Bake 30 minutes.
